Vanilla is an aid in the production of pastries, sweets and many foods that give them taste and smell. Natural vanilla (as opposed to artificial) is extracted from vanilla beans where it is found at a rate of 1.5% -4.5%. Vanilla beans are fruits grown in the form of pods in tropical countries such as Brazil, Ceylon, Madagascar, Hawaii, Mauritius, the Seychelles and more. The taste and smell of dried vanilla pods is due to the vanilla created during the fermentation in which the beans pass after being picked. The aforementioned vanilla crystals contain about 1.5% -4.5%, and they are scattered on the black dry pods. The pods are kept in airtight boxes or glass jars, and are supplied to food factories from which, as mentioned, the flavoring material is made from liquid vanilla or in the form of powdered sugar or natural in the form of crystals. Some sell vanilla pods that have already extracted the vanilla and are artificially covered with vanilla crystals and benzoic acid in a very thin layer. And they are a substitute for real vanilla.
