 Citric acid (known as citric salt) is an acid derived from lemons, from pineapple waste and even more sour fruits. Commercially, it today produces molasses, candies, corn, wheat and more by using a mold enzyme (called "Aspergillus niger") in the form of crystals dissolved in water. Citric acid is used as an antioxidant (antacid and preservative) and is also widely used to acidify soft drinks in various foods and sweets. 
 Also used in making biscuits, canned vegetables, canned fruits, frozen potato products, sauces, to treat raisins, ice creams, cake ingredients, soups, beer, wine, cider, jams, jelly, marmalades, various canned products, fish products, Bakery products, various cheeses and many other foods.
